7up and Pistachio cupcakes, great for St-Paddy's day!



    Even though St-Patrick’s day is not celebrated in the French culture, I always like to do something special to celebrate it. This year, I decided to bake some Pistachio & 7up cupcakes! Not only is it my all-time favorite kind of cake (I have it every year on my birthday) but, the icing and the cake is also green! For this recipe, you will need:
Cake
  • 3 eggs
  • 1 box of white cake mix
  • 1 cup of 7up or sprite
  • 3/4 cup of oil
  • 1/2 cup of walnuts or pecan (optional)
  • 1 box of green pistachio pudding (Jell-o brand)


Icing
(If you make this recipe for cupcakes instead of cake, you’ll only need half of the measurements. Unless, you like to have a lot of extra icing!)
  • 1 box of nutri whip
  • 1 box of green pistachio pudding (Jell-o brand)



Steps
For 15 cupcakes
  1. Preheat oven at 350
  2. Add cake mix, one box of pudding, the 7up, the oil followed by the eggs in a bowl and mix.
  3. Using the back of a fork, crush the walnuts in small pieces.
  4. Using an electric mixer, mix the preparation
  5. Place the cake batter even into 15 baking cups.
  6. Place them in the oven for about 30 minutes.
  7. While it bakes, add the nutriwhip & the other pistachio mix in a small bowl and whip it with the electric mixer for about 10 minutes until it thickens.
  8. After the cupcakes are baked and cooled off, ice them and eat them!!

Better than any bakery!!
